You read that correctly. Saffron liqueur. Sure it’s a little strange, but give it a try! The spirit features a rich, almost oily, texture with minimal sweetness. It’s a surprisingly versatile spirit for cooking, an easy turn to as an accompaniment to paella (with club soda, it’s silly good!), and makes for some interesting cocktails. My personal favorite right now is Apologue with Poli Gran Bassano Vermouth Bianco topped with club soda (1 part Apologue, 2 parts Poli, club soda to taste).
